Recipe: Scup Ceviche

Ingredients:
- 1 lb scup fillets
- 1 jalapeño diced
- 1 avocado sliced
- Salt and pepper to taste
- Juice of 1 lemon, lime, and orange
- 5 cherry tomatoes diced
- 1/2 medium red onion diced
- 1/2 cup pineapple diced
- Tajin seasoning to taste
Directions:
- Cut jalapeño, cherry tomatoes, onion, and pineapple and add to bowl.
- Add juice from lemon, lime, and orange to bowl and mix.
- Season with salt and pepper.
- Cut scup fillets into bite-size pieces and add to bowl.
- Slice avocado and add to ceviche mix.
- Add tajin to taste.
- Let scup marinate in citrus at least one hour.
- Serve with tortilla chips.
