Duck-Stuffed Jalapeño Poppers Recipe
What’s a better way to spice up your game meat than adding a little spice, literally? These duck-stuffed jalapeño poppers are amazing as an appetizer, snack, or main course.
Instructions:
Before cooking, soak 4 duck breasts in 1 quart of buttermilk overnight in refrigerator.
- - Set oven to 400 degrees.
- - Prepare duck spice rub, mixing salt, pepper, garlic powder, onion powder, paprika, and cumin in a small bowl. Set aside.
- - Prepare the cream cheese filling, mixing cream cheese, shredded cheese, garlic powder, onion powder, and green onions in a bowl until combined. Set aside.
- Remove duck breasts from buttermilk bath and pat to dry with a towel.
- Pat seasoning into the breasts on both sides until coated. Cut each duck breast into 6 thin strips.
- - Fill each jalapeño half with 1/12 of the cream cheese filling and 2 duck strips.
- Wrap each stuffed jalapeño with a ½ slice of bacon and use a toothpick to hold the bacon the jalapeño popper together.
- Place stuffed jalapeños on a greased baking sheet and bake for 15 minutes until tender.
- Turn oven to broil and cook for 6-8 minutes, or until bacon is crispy.

- 6 slices of bacon, cut in half
- 4 duck breasts
- 6 jalapeños, halved and seeded, as desired
duck spice rub
- 1/4 tsp. each of salt, pepper, and paprika
- 1/2 tsp. each of garlic powder and onion powder
- 1/8 tsp. of cumin
cream cheese filling
- 8 oz. cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1 tsp. each of garlic powder and onion powder
- 3 green onions, chopped
